Strawberry preserves


I'm really proud of my self, not only did I clean out my refrigerator and freezer but I managed to make a few desserts while I was at it. I had a huge bag of frozen strawberries that was just taking a lot of space in my freezer, so I decided to make a jam out of it. :) Being that I'm not a big fan of super sweet jams, I added less sugar. Its sweet enough to eat alone on toast but tart enough to use as a cake filling without overpowering your cake or frosting. It taste so delicious with toast and unsalted cream cheese.


Ingredients
4 1/2 to 5 cups frozen strawberries
1 cup sugar
1 teaspoon lemon juice

Directions

Rinse your strawberries and allow them to defrost for a few minutes but don't allow them to completely thaw out.

Place your strawberries in a large bowl, add your sugar and set them aside for approximately 2 hours or until the sugar has melted into the strawberries.

Place in a medium heavy duty pan and cook over low heat for 1 to 2 hours or until the strawberries have dissolved and the juices have thickened. You'll know the jam is done when the you dip a spoon and the back of it is coated.

Cool jam completely before placing in jars and storing in your refrigerator.

Mashallah this sounds so yummy but I'm trying to eat healthier right now so I will have to wait a little bit until I get to try this recipe.
