Chocolate buttermilk cake
This cake is simply amazing, I made 2 cakes and was planning on getting fancy with it but decided to just leave it as is. It is moist, light, and oh so chocolaty (if that's even a word lol) you can serve it plain, with icecream or topped with frosting. My son and I had some first thing this morning with a large cup of milk. I used 1/2 cup of 1848 french cocoa mix but if you don't have that available you can use anywhere from 1/2 cup to 3/4 cup cocoa powder. I almost always add a bit of coffee to my chocolate desserts,it really brings out the chocolate flavor. The buttermilk really makes this cake moist.
Ingredients
1 3/4 cup self rising flour
1 teaspoon baking soda
1 cup sugar
1/2 cup 1848 French cocoa powder
1/3 cup cocoa powder
1/4 teaspoon salt
3 eggs
3/4 cup oil
1 teaspoon vanilla
1 cup buttermilk
1/2 cup hot brewed coffee
Directions
Preheat your oven to 350*. Butter and dust your pan with cocoa powder or 1 tablespoon of your prepared dry cake mix, set aside. In a medium bowl sift your flour, baking soda, salt, and cocoa powders. Set aside.
Mix your sugar, eggs and vanilla with and electric whisk or by hand until very light in color and creamy, whisk in your oil until well combined. Add your flour mix to your egg mixture alternately with the buttermilk, mix to combine. At this point you can add your hot coffee and mix to combine. Please make sure not to over mix this batter. Pour into prepared pan and bake for approximately 35 minutes or when toothpick inserted comes out clean.

This was a very simple honey chocolate icing... All I did was melt semi sweet chocolate and sweeten it with honey. You can top it with ganache or whip topping but it's incredibly moist, it shouldn't need more than a dusting of powder sugar.

Sorry for posting about a million questions, didn't look like they were going through!! This cake mixture is lovely, just finished taking it out oven!
