Buttermilk breakfast cake (with cinnamon apple topping)


Sitting here yesterday thinking of something to do with the buttermilk sitting in my refrigerator before it goes bad, I came up with this Delicious and easy to make Breakfast Cake. The batter is simple and can be put together in under 10 minutes in fact the whole cake can be sitting on your table in under 30minutes AND you don't have to stand in front of a griddle flipping pancakes for the entire family. When I make breakfast I can never make up my mind as to what I should make first, my hash browns or pancakes? No I can make the hash browns on the stove and have this baby baking in the oven at the same time. How neat is that! :)



Ingredients
1 1/2 cups all purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
2 eggs (room temperature)
1 1/2 cups buttermilk (room temperature)
4 tablespoon butter (melted) for your cake batter

**Cake topping and pan ingredients**
1 green apple (peeled and thinly cut in rounds)
4 tablespoons Sugar
2 teaspoons cinnamon powder
3 tablespoons butter for your pan.


Directions
Preheat your oven to 350*.

Mix all your dry cake ingredients in a medium bowl set aside.

Place your cake pan in the oven with 3 tablespoons of butter.

Peel and slice your apple, set aside. In a small bowl mix both your 4 Tablespoons of sugar and cinnamon.

Mix all your wet ingredients in a Medium bowl and beat until well combined.

Rub your apples with any remaining melted butter and coat with your sugar and cinnamon mix.

Pour your wet mix into your dry mix all at once and mix until combined but not over mixed, the batter should still have small lumps (like pancake batter).

Remove your hot cake pan from the oven and pour in your batter, place sliced apples on top and bake for approximately 20 minutes or until toothpick inserted comes out clean. Serve warm with honey or maple syrup.
