Applesauce

No apple sauce taste better than homemade applesauce. Made from handpicked organic apples. This applesauce has a sweet and tart flavor, good to eat alone or with crushed graham crackers and a doll up of caramel. I'm in Morocco, so I had to settle for a doll up of homemade Dulce de Leche.

3Lbs good cooking apples, such as Macintosh or granny smith (I used 8 med apples)
1/4 cup sugar
1/4 cup brown sugar
3 pieces of lemon peel
1/2 teaspoon cinnamon or 3 inch cinnamon stick
juice of 1 lemon
1 cup water
pinch of salt

Peel, core, and dice your apples. Combine all the ingredients in a med size sauce pan, cook for approx 15 min covered then 10 minutes uncovered or until apples are cooked and smash by the touch. Serve warm over (vanilla bean) ice cream or eat cold with a doll up of caramel. The applesauce in the picture only has 1/4 cup of white sugar, since it was made for baking purposes but taste just as good.
