Chocolate chip zucchini muffins...






One of my sisters favorites are Zucchini muffins from Paradise Bakery, and as for me I love bittersweet chocolate in any muffin, so I combined the two and WOW... I've made a few of these before from recipes I found online and they were very tasty but these I tell you are buttery, moist, chocolate heaven that makes you forget you're eating a veggie in your muffin.

Ingredients
3/4 cup all purpose flour
1/2 cup fine whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon powder
1/3 teaspoon mace
1/4 teaspoon salt
1/2 cup fine white sugar
1/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup melted butter
1 tablespoon oil
3 tablespoon plain yogurt
1 cup shredded zucchini
1/2 cup semisweet chocolate chips

Directions
Preheat your oven to 350* F. Butter and flour a muffin pan, set aside.  In a small pan melt your butter, add the brown sugar and whisk to dissolve. Set aside.In a large bowl sift your flours, baking powder, baking soda, salt, cinnamon, mace, and white sugar. Set aside. In a separate bowl whisk the eggs with the yogurt until the yogurt is lump free, add the vanilla and butter mixture and whisk to combine. Fold 1/2 of the flour into the egg mixture, followed by half cup of shredded zucchini, add the remainder of the flour (leave 1 tablespoon behind to toss the chocolate chips in) followed by 1/2 cup of zucchini, toss the chocolate chips into the bowl of flour and fold them into your batter.  Evenly spoon the batter into your prepared pan approximately 3/4 up each muffin cup. Sprinkle the tops with coarse sugar and bake for approximately 20 to 25 minutes or until a tooth pic inserted in the center comes out clean. Cool in the pan for a couple of minutes then transfer to cool completely onto a wire rack.

This is a way better use for the humble courgette in my opinion, I dislike the soggy thing in soups, stews etc but im sure id enjoy the extra moisture it must add to the choccy muffin.

I have always loved zucchini bread, but have one (weird) kid who rejects "veggies in deserts"--maybe THIS will get him! If not, I'll eat his share :D

My son is super picky but with all the chocolate chips he didn't even bother asking what the green stuff was. :)
